Emeril screwed my dinner!
I've been watching Emeril Lagasse for the longest time. Way before the "Bam's" and catch phrases he uses. I've come to realize that Emeril's recipe for success doesn't include any recipes at all. I've been in the neighborhood of Emeril's restaurants, mainly in Las Vegas. Emeril's restaurant has a seafood theme. I hate seafood however, even if I liked it, I would proceed with extreme caution. The last time I checked, Las Vegas wasn't exactly a hot spot for fishing. Emeril claims that everything he knows came from Julia Childs. I think Julia was hitting the White Zinfadel when Emeril was her student. Going by one of his recipes exactly as written will lead to disaster and your calling Pizza Hut for dinner. You might say that Emeril "tweaks" his recipes. That's only half the story! If it calls for a pinch of salt, Emeril will say "screw it!" and throw in a handfull. The same can be said of his spices. "kicking it up a notch" means being awake all night with heartburn!
